The Crete Senesi are a large clayey basin located in the southern part of the province of Siena, an area in which, thanks to its conformation, particular plants, shrubs and herbs grow, capable of flavoring the milk from the sheep that eat them. The area is covered with a typical spontaneous flora of Prato, which makes it unique and inimitable, giving the milk strong and tasty notes.
Aged pecorino delle Crete Senesi is made from 100% pure sheep's milk and is produced until May and June. It has a dark crust resulting from massaging carried out with the sediment of olive oil in the last sixty days of maturation. The internal paste is clear, crumbly, with rich aromas that border on decisive notes of aromatic herbs. On the palate it is dry and delicate. It surprises with its tasty persistence that borders on sweet and round sensations.
