Matured Crete Senesi Matured

Description

The Crete Senesi are a large clayey basin located in the southern part of the province of Siena, an area in which, thanks to its conformation, particular plants, shrubs and herbs grow, capable of flavoring the milk from the sheep that eat them. The area is covered with a typical spontaneous flora of Prato, which makes it unique and inimitable, giving the milk strong and tasty notes.

Aged pecorino delle Crete Senesi is made from 100% pure sheep's milk and is produced until May and June. It has a dark crust resulting from massaging carried out with the sediment of olive oil in the last sixty days of maturation. The internal paste is clear, crumbly, with rich aromas that border on decisive notes of aromatic herbs. On the palate it is dry and delicate. It surprises with its tasty persistence that borders on sweet and round sensations.

Pairings

It is advisable to serve it together with sweet ingredients. Excellent with honey, jams, raisins, seasoned ripe fruit sauces, but also with dried fruit or mill oil dropped on the slice.

Preservation

Store the cheese in a cool, dry place; or halfway through the fridge wrapped in vegetable paper or in a cotton napkin. If the fridge is excessively humid, place a cup with salt next to the cheese so that excess moisture is absorbed by the latter.

Ours is a story, made of gestures,
tradition, people, and dialogue

Forme d'Arte has selected a series of small producers of Tuscan cheeses both because by deepening a limited area we can better understand a product, and because Tuscany is our land, with its scents, colors, and landscapes that change from one area to another and depending on the season.
