Pecorino al Peperoncino

Description

Sweetly spicy. It is a cheese made exclusively from sheep's milk, has a strong and decisive soul that combines the dairy tradition and the organoleptic and healthful qualities of chili. Semi-mature Pecorino has a color tending to straw yellow with a compact, white paste. It has a pleasant, Mediterranean flavor, lively and rightly spicy.

Perfect as an appetizer or for aperitifs, try it in bold pairings such as with melted chocolate and fresh strawberries. A cheese that can give, to the most refined and demanding palates an intriguing taste experience.

Pairings

With chocolate, but also with acacia or Millefiori honey, it should be paired with young red wines.

Preservation

Store the cheese in a cool, dry place, or halfway in the refrigerator wrapped in vegetable paper or a cotton napkin. If the refrigerator is excessively humid, put next to the cheese a small cup with salt, so that excess moisture is absorbed by the latter.

Ingredients

Pasteurized sheep's milk, salt, crushed chili (0.5 percent) rennet, ferments. Surface treated with canola oil.
