With this pecorino we wanted to combine two Tuscan excellences in an innovative way: the "cacio" and the Chianti D.O.C.G. A compact pecorino cheese was created, with a pinkish-white or pink color which, when cut, strongly releases its aroma. After processing and maturing, the alcoholic residue in the cheese is not detectable by instrumental examination (quantification limit 0.1%) therefore the cheese no longer has the intoxicating power of alcohol but retains its aroma. An aroma reminiscent of ancient flavors that blend gracefully in the mouth and head, leaving even those who do not particularly like spirits, amazed.
