Mucca Blue Cheese

Description

This exceptional cheese is a unique creation, featuring a semi-hard paste renowned for its extended maturation. Whole cow's milk is carefully pasteurized and then enriched with selected molds, imparting a distinctive taste profile to this product. Its rind has a brown color, often with the presence of characteristic molds, although it should be noted that the rind is not suitable for consumption. A touch of caramel is delicately applied to the surface. The cheese paste presents itself in a white hue with a compact texture that melts in the mouth. It is characterized by skillfully distributed blue nuances, offering an aromatic bouquet that translates into bold buttery notes, all with a slight spiciness imparted by the blue veining. The forms of this exceptional cheese spend a full 60 days maturing in cool and humid environments, resting on white fir shelves. This extended aging period bestows upon the cheese its extraordinary qualities and a unique flavor.
