Description

This exquisite cheese is crafted from high-quality goat's milk, enriched with a careful selection of molds that impart a unique profile to the product. Its rind features an elegant gray-brown structure; however, it's important to note that the rind itself is not intended for consumption. Inside, the cheese's paste offers a compact structure of radiant white, enriched by abundant development of selected molds that give the cheese its distinctive personality. Its texture is robust and firm, and the flavor is bold with a pleasant hint of spiciness. This exceptional cheese undergoes a maturation period in cool and humid environments, resting on white fir shelves, for a duration of 60 days. This extended aging phase allows the cheese to fully express its extraordinary qualities.
