Tuscany, along with Sardinia, leads in the production of sheep cheeses

and can be considered the cradle of cheese-making, thanks to the Etruscan heritage, where sheep farming was widespread already in the Bronze Age.

Authors from the Hellenistic and Roman periods mention herds in Etruscan territory. The cheeses of Luni were famous, as mentioned by Pliny the Elder (Plin.nat. XI, 241).

We are also informed about the presence of Etruscan herds in Southern Etruria by Plutarch (Tib. 8,7). Pliny the Younger (Plin.epist. VIII, 20) talks about herds in the territory of Roselle.
