Description

The Crete Senesi are a large clayey basin located in the southern part of the province of Siena, an area where thanks to its conformation, particular plants, shrubs and herbs grow, capable of flavoring the milk from the sheep that feed on it. 

The area is covered with a typical spontaneous flora and wild herbs, which makes it unique and inimitable, giving the milk strong and tasty notes.

Semi-matured Crete Senesi pecorino is made from 100% pure sheep's milk and is produced until May, June. It presents itself with red crust thanks to the tomato with which it is massaged weekly to keep it soft, while the internal paste is clear, crumbly, with rich aromas that bring on decisive notes of aromatic herbs. On the palate it is dry and delicate. It surprises with its tasty persistence that brings on sweet and round sensations.

Pairings

Excellent to accompany salami. Perfect with a Chianti Classico or with full-bodied red wines, it can be enjoyed alone or with good extra virgin olive oil. Try it with honey, jams or grapes when it is in season.

Preservation

Store the cheese in a cool, dry place; or halfway through the fridge wrapped in vegetable paper or in a cotton napkin. If the fridge is excessively humid, place a cup with salt next to the cheese so that excess moisture is absorbed by the latter.
