Una pezzatura speciale di quasi 2,5 Kg per uno dei nostri prodotti più apprezzati. Dolcissimo, il nostro Pecorino Stagionato in Grotta subisce una prima stagionatura di almeno 20 giorni in celle specifiche e successivamente viene messo a maturare su assi di castagno dai 50 ai 90 giorni a seconda della pezzatura della forma.
Settimanalmente le forme vengono girate e spostate, le alte verso il basso e viceversa e oleate con olio di oliva. Questo procedimento dona a ogni forma un gusto unico, pieno e saporito.

DESCRIPTION
A special size of almost 2.5 kg for one of our most popular products. Very sweet, our Pecorino aged in grotto undergoes a first maturation of at least 20 days in specific cells and is then left to mature on chestnut boards from 50 to 90 days depending on the size of the wheel. Every week the wheels are turned and moved, the top down and vice versa and oiled with olive oil. This process gives each wheel a unique, full and savory taste.
